BRRR!!!! Back to the arctic weather...........

How cute is this little tobagan man??? Calling for more snow and ice in the next couple of days! Sure glad I've stocked up soup makings and maybe whip up a few muffin and cookies for the kids! Try out this white chili recipe! It is yummy!



1 bag dried white navy beans
5 cups chicken stock (Maybe a little more, you can tell if you need it)
1/2 stick butter
1 tbls minced garlic
3/4 cup diced onion
1 1/2 cups chopped green chilies (fresh or canned)
1 lb boneless skinless chicken breasts finely chopped
1 tbls ground cumin
1 tbls dried oregano
2 tsp black pepper
1/2 tsp white pepper ( couldn't find this)
pinch red pepper flakes
1/2 bunch cilantro chopped

Boil chicken breast and reserve stock. Chop into pieces.

Rinse beans well, cover with cool water, and soak for 2-3 hours. The longer the better. Watch you will have to add water often. Put the beans in large pot with the chicken stock and bring to a boil over high heat.

In a saucepan, heat the butter over medium heat. Add garlic, onion, and chiles and saute for 5 minutes. Add chile mixture to pot with beans. Add chicken, cumin, oregano, pepper, white pepper, red pepper flakes, and cilantro. Lower heat to medium and cook. Stir occasionally for 1 1/2 hours until beans are very soft.

  2. mmmm, that sounds sooo good!!! i will have to try it. sounds healthy too, and that is what i am aiming for these days.
