1 bag dried white navy beans
5 cups chicken stock (Maybe a little more, you can tell if you need it)
1/2 stick butter
1 tbls minced garlic
3/4 cup diced onion
1 1/2 cups chopped green chilies (fresh or canned)
1 lb boneless skinless chicken breasts finely chopped
1 tbls ground cumin
1 tbls dried oregano
2 tsp black pepper
1/2 tsp white pepper ( couldn't find this)
pinch red pepper flakes
1/2 bunch cilantro chopped
Boil chicken breast and reserve stock. Chop into pieces.
Rinse beans well, cover with cool water, and soak for 2-3 hours. The longer the better. Watch you will have to add water often. Put the beans in large pot with the chicken stock and bring to a boil over high heat.
In a saucepan, heat the butter over medium heat. Add garlic, onion, and chiles and saute for 5 minutes. Add chile mixture to pot with beans. Add chicken, cumin, oregano, pepper, white pepper, red pepper flakes, and cilantro. Lower heat to medium and cook. Stir occasionally for 1 1/2 hours until beans are very soft.
Those little fellow do look darn cute all wrapped up.....but I am so sick of this weather. haha Enough already... Come on Spring!

mmmm, that sounds sooo good!!! i will have to try it. sounds healthy too, and that is what i am aiming for these days.
